OVEN;350F/180C
2 CUPS FLOUR
1 TBSP BAKING POWDER
1/2 TSP SALT
1 EGG
1 CUP GRANULATED SUGAR
4 TBSP UNSALTED BUTTER@SALTED BUTTER
11/4 OF SOUR CREAM@ BUTTERMILK
11/2 CUPS OF FROZEN BLUEBERRIES-I PUT 1 CUP ONLY.
METHOD;
1- WHISK FLOUR,BAKING SODA AND SALT IN THE BIG BOWL.
2- WHISK THE EGG IN SEPARATED BOWL UNTIL COMBINE AND LIGHT COLOUR..ABOUT 30 SECOND.
ADD IN SUGAR AND WHISK UNTIL THICK ABOUT 30 SECONDS.ADD IN MELTED BUTTER IN 2-3 ADDITIONS BY WHISKING UNTIL ALL WELL COMBINED.
3- ADD BERRIES TO THE DRY INGREDIENTS AND GENTLY TOSS TO COMBINE.
4- ADD IN SOUR CREAM MIXTURE @ BUTTERMILK MIXTURE AND FOLD WITH THE RUBBER SPATULA UNTIL THE BATTER COMES TOGETHER AND BERRIES ARE EVENLY DISTRIBUTED 25-30 SECONDS.
SMALL SPOT OF FLOUR MAY REMAIN AND THE BATTER WILL BE VERY THICK SO DO NOT OVERMIX.
5- PUT IN THE MUFFIN TIN AND BAKE UNTIL GOLDEN BROWN..COOL THE MUFFINS FOR 5 MINUTES.
